Yoast plugin recognize the text from WP editor only and any other text won't be recognized. So if you want the text to be recognized by Yoast, you need to move the whole content into WP editor.

All included into theme icons are listed on http://themes.muffingroup.com/betheme/shortcodes/typography#icons but like we wrote above, how_it_works shortcode doesn't have option to display icons. This shortcode works with images only.
