Hey, you can do this under Appearance > Menus section. Just activate Categories and and them individually to menu. If you don't see them by default, you can activate them under Screen Options in the right top corner.

Hey, we are sorry but you can not reduce space for VC. This is how plugin's author coded it and if you don't like it, you should report it to plugin's author. We did it few months ago but so far nothing has changed.

To set header background on inner pages, you need to use Header Image or Featured Image options (depends on what kind of page it is). Header Image works for posts and portfolio pages but Featured Image for regular pages.
