To set header background image for pages, you need to use Featured Image option which is on the right hand side when you edit page. For portfolio pages, you need to use Header Image field which is under Portfolio Item Options section.

@THISISALLGOOD Images sizes can be changed under functions/theme-functions.php file where add_image_size() functions are. But if you don't know how, you should contact with your web developer.
