This can be done with multiple templates with a combination of global wraps. So for example all products with ECO tag/category can display a template assigned to this tag/category with global wrap with appropriate elements. Best regards

The plugin you use for variations uses the add to cart button to display variations. Catalogue mode disables to cart button completely, so there is no other option to make it work with catalogue mode. Best regards
