What scares me is that after working on the site for hours your solution was to reinstall from start again when the solution was a small edit to the shortcode.

This is not a solution. I have worked hours on this site and I see that this is your answer to quite a few posts which really scares me. I have found a solution which is to add size="full" in the shortcode where the gallery appears.
